Quick comfort food
Winter is the time of year when we naturally seek out comforting, nourishing food. Here are some suggestions for when you're seeking solace but lack the time to slow cook the braises and roasts we typically associate with the season.
Soups
The ultimate winter comfort food, soups can also be speedy with a few simple shortcuts. Start with a good pre-made stock or canned soup, add diced vegetables, pulses and herbs, simmer until the vegetables are tender, then puree in a blender or with a stick mixer before reheating briefly for a soup that is both for body and soul. Cook diced chicken, pasta and diced veggies in chicken broth for a quick and easy chicken noodle soup when the winter sniffles hit (some call it "Jewish Mother's Penicillin"). Asian-style soups are another easy winter winner -- especially since good quality bases are now easy to buy at most supermarkets. Try ramen noodles with meat, Asian greens and miso or Thai Tom Yam or Tom Kha soup with chicken or prawns and vegetables served with rice.
Pasta faster
Pasta is undoubtedly one of the quickest comfort foods of all. There are many sauces that can be made in the time it takes your pasta to cook, such as carbonara, aglio e olio, or puttanesca. Toss a good pre-made pesto with pasta and perhaps some grilled chicken for a high-speed tasty dinner. Fresh-cooked pasta and gnocchi cooks in mere minutes and when combined with a good-quality pre-made sauce can be on the table in less than 10 minutes.
Speedy pizza
You can make pizza in less time than it takes to dial for takeout, particularly if you're happy to 'cheat' and use some of the great pre-made bases available. Simply spread with a pre-made pizza sauce, pesto or homemade tomato pasta sauce, dollop over your favourite toppings and bung in the oven. Use Lebanese bread as your base for an even quicker cooking, low calorie version.
Quick cook grains and grills
Quick cooking grains such as couscous, instant rice or pearl barley can save time when you're in a rush and need carbs to pad out a meal. Grill some pre-marinated meat, add a serve of grains and some salad or veggies and you've got a well-balanced meal in a flash.
One-pan meals
There's a lot to be said for tray-baked meals and one-pot casseroles when you're time poor, since they save not only on prep time but also on washing up. Make a quick pie by topping a leftover stew with store-bought pastry or mash or throw some chicken drumsticks in a roasting pan with vegetables, onions, garlic and herbs and roast for 30-40 minutes.
